Quick, Wholesome, Winter Vegetable Soup

Ingredients:

§  4-5 whole carrots, chopped

§  4-5 whole celery stalks, chopped

§  1 small yellow onion, finely chopped

§  1.5 cups frozen organic kale or greens of choice

§  1 cup of mushrooms

§  Minced garlic to taste

§  Organic wild rice (cooked-cook while chopping veggies)

§  20 oz organic vegetable broth

§  ½ cup of unsweetened almond milk

§  ½ cup coconut milk or creamer (our fav SO Delicious coconut creamer)

§  3 tbs Extra-Virgin Olive Oil

Directions:

1.      Sauté onion and garlic in olive oil in large pot over medium heat, until onion becomes translucent

2.      Add in the rest of the vegetables (carrots, celery, kale, mushrooms) and sauté for 5-10 minutes or until your desired doneness of vegetables, we like ours firmer.

3.      Pour in liquids (almond and coconut milk) and wild rice and bring to a boil, cover and simmer for 10-15 or until veggies are the desired texture/doneness you prefer.

Be ready to feel nourished and satisfied!
