PUMPKIN CHOCOLATE CHIP MUFFINS:
Keep blood sugars stable and feel satisfied while enjoying these fall nutrient-packed muffins
Ingredients:
2 tbs coconut oil (melted)
2 eggs
2 tsp milk alternative (I used coconut milk)
1 tsp vanilla extract
1 cup pumpkin puree
4 oz of Siggis whole milk vanilla yogurt
½ cup of coconut sugar
1 ¾ cup oat flour (gluten free)
1 ½ tsp baking soda
½ tsp baking powder
1 scoop Vital Proteins Collagen Powder
2-3 tsp pumpkin pie spice seasoning
½ cup chocolate chips (Enjoy Life Dark chocolate morsels😊)
Directions:
Preheat oven to 350 and oil muffin tins with coconut oil.
Mix all wet ingredients together (first 7 ingredients).
Mix all dry ingredients together and then pour and fold into wet ingredients.
Stir in chocolate chips.
Bake for 20-25 minutes or until toothpick comes out clean. *Makes 12
