Power Packed Pumpkin Pancakes:

Ingredients:
*2 tbs melted Coconut oil
*2 Eggs

*8 oz Pumpkin puree
*8 oz Yogurt (Siggi’s is our fav)
*2 tbs Maple syrup
*1 ¼ cup of Oat flour
*2 tsp Baking soda

*2 tsp Pumpkin pie spice

*2 scoops unflavored Collagen protein powder


Directions:
*Mix all wet ingredient in bowl together
*Fold in all dry ingredients
*Heat 1-2 tbs of coconut oil in skillet on medium heat
*Scoop large spoonful of mix into warmed skillet and cook each side for 3-5 minutes and flip once slightly brown

*Should make about 6-8 pancakes depending on size

*Can add 1-2 tbs of nut butter on top with a drizzle of maple syrup for a yummy topping.
