PUMPKIN CHOCOLATE CHIP MUFFINS:

Keep blood sugars stable and feel satisfied while enjoying these fall nutrient-packed muffins

Ingredients:

  • 2 tbs coconut oil (melted)

  • 2 eggs

  • 2 tsp milk alternative (I used coconut milk)

  • 1 tsp vanilla extract

  • 1 cup pumpkin puree

  • 4 oz of Siggis whole milk vanilla yogurt

  • ½ cup of coconut sugar

  • 1 ¾ cup oat flour (gluten free)

  • 1 ½ tsp baking soda

  • ½ tsp baking powder

  • 1 scoop Vital Proteins Collagen Powder

  • 2-3 tsp pumpkin pie spice seasoning

  • ½ cup chocolate chips (Enjoy Life Dark chocolate morsels😊)

Directions:

  1. Preheat oven to 350 and oil muffin tins with coconut oil.

  2. Mix all wet ingredients together (first 7 ingredients).

  3. Mix all dry ingredients together and then pour and fold into wet ingredients.

  4. Stir in chocolate chips.

  5. Bake for 20-25 minutes or until toothpick comes out clean. *Makes 12
