Grain Free Blueberry, Zucchini, Orange Muffins

Ingredients:

*2 tbs coconut oil, melted                                                       *1/2 cup coconut sugar

*1 orange grind and juiced (~ 1/3 cup)                                 *2 cups (almond or oat flour: Bob’s Red Mill)

*1/3 cup unsweetened almond milk                                     *1 tsp baking powder

*2 zucchini, grated about 1 cup                                              *1/4 tsp baking soda

*1 egg                                                                                          *1 cup fresh or frozen blueberries

* 2 scoops unflavored collagen protein powder (optional)

Directions:

1.       Preheat oven to 350 degrees

2.       Mix all wet ingredients together, then add in sugar

3.       Then fold in flour, baking powder, baking soda and collagen powder

4.       Fold in blueberries

5.       Put in muffin tin liners and spoon batter evenly into 12 muffins cups

6.       Bake for 25-30 minutes or until toothpick comes out clean

 

*Makes 12, Cake like consistency, ENJOY😊
